Mexican Tortillas are a family-favourite perfect for a mid-week supper.
225g (8 oz) minced beef
1 small onion, finely chopped
1 chilli, deseeded and finely chopped
Salt and freshly ground black pepper
Sour cream or crème fraîche
1. Fry the minced beef on the hotplate in a non-stick frying pan, then add the onion, chilli and seasoning. Stir until the beef is cooked and browned.
2. Meanwhile, heat the tortillas in either the main oven or on the simmering side of the hotplate.
3. Assemble by dividing the meat mixture between the warmed tortillas, then add a blob of sour cream. Fold over or roll up into a 'wrap' and serve with the guacamole.
