With just two ingredients you can make delicious and light baked Meringues.

3 large egg whites
180g caster sugar
Makes 16
- Place a sheet of greaseproof paper on a large baking sheet.
- Place egg whites in a large, clean grease-free bowl and whisk eggs until they stand up in peaks. Gradually whisk in the sugar, a spoonful at a time. The mixture should be thick and hold in peaks. Using a plain nozzle, pipe 16 rounds onto the lined baking sheet.
- Place the baking sheet in the lower oven on simmer on position 2 or 3 and allow to dry out for 1 ½ - 2 hours. The meringues should easily peel off the paper
- Cool on a wire rack and store in an airtight tin.
