Double Chocolate Chip And Macadamia Nut Cookies


85g (3 oz) softened butter

115g (4 oz) caster sugar

55g (2 oz) light soft brown sugar

½ tsp vanilla extract

1 egg, beaten

175g (6 oz) self raising flour

60g (2¼ oz) Macadamia nuts, chopped

55g (2 oz) white chocolate chips

55g (2 oz) plain chocolate chips


1. Cream the butter and sugars together, then gradually beat in the vanilla and egg. Next, fold in the flour, nuts and chocolate chips. 

2. Spoon tablespoonfuls of the mixture onto baking trays lined with Bake-O-Glide, leaving room for each cookie to spread.

2. Cook in the centre of the main oven at 180°C (350°F) or Gas Mark 4 for about 15 minutes or until golden brown. Turn baking sheet halfway during cooking.

3. Cool on the tray for a couple of minutes before transferring to a wire rack.
